My Son's Avo-Acorn Squash Raw Soup

This soup is a creamy surprise and a lovely blend of savory and lemony flavors. Basically put all the ingredients in the VitaMix and whirl it up until smooth, creamy and warmed. Lovely! (Full of enzymes and other great nutrients that you won't find in the cooked version of this soup)

  • Acorn squash, peeled, seeded and chopped (seeds will be dehydrated to chew on later)
  • 1/2 shallot
  • 1/2 thumbsize ginger
  • 1 lemon (juice)
  • 1 Avocado
  • sprinkle of Cumin, Tumeric
  • sprinkle of sea salt, dulse
  • 3 C. water
  • Large handful of Cilantro (few sprigs to garnish)
