Easy Creamy Celery Soup - Vegan, GlutenFree

Okay, so the above picture of the Easy Creamy Celery Soup looks as if some ink has leaked along the one side of the bowl... well, it's an artistic shadow, and I like it.  This smooth and creamy soup is a wonderful tasty addition to any winter-y day.  Easy to make if you have a blender.  An Instant Pot helps to speed things up, but you don't need one...

If I use the Instant Pot, I do everything on Sauté- never even put the lid on the thing.  Done in a jiffy.

But, otherwise, just cook it in a soup pot like you normally do.

However, I am getting ahead of myself!

INGREDIENTS:

  • 1/2 C. Water
  • 1/2 Yellow Onion, sliced
  • 1/2 Bunch of Celery (or more, if you wish), chopped (Reserve the Leaves)
  • 1 small peeled Potato, diced
  • 1 small Bay Leaf
  • 2 C. Vegetable Broth (I put 2 cubes of my homemade Golden Boullion in 1 3/4C. Hot Water)
  • 1 C. Water
  • 1/2 C. Full-Fat Coconut Milk (or other non-dairy milk-- the coconut milk does work best)
  • 1/2 C. Fresh Parsley (Optional)
  • Salt to Taste
  • Garnish with Celery Leave, sprinkle of Chipotle Pepper OR Black Pepper OR as desired

METHOD:

  1. Add the water to Instant Pot and turn to Sauté OR add water to a large soup pot/stock pot and bring to a boil.
  2. Add in the Onion, Celery, Potato, Bay Leaf and bring to a boil, stirring to prevent sticking.  Add more water if needed.  In the Soup Pot, turn to simmer after rolling boil is established.  In Instant Pot, just let it go with the sauté mode.  When the potato, onion and celery are beginning to be quite soft, add in the Vegetable Broth and additional 1 C. Water.
  3. Let the Instant Pot continue on in Saute till the cycle is complete.  Turn the Pot on to LOW and let the vegetables cook until done with the Soup Pot. (This is soup, so they can be as limp as possible lol)
  4. Put the Coconut Milk and the Parsley into the Blender and add the contents of your Pot (both the Soup Pot and the Instant Pot).  Carefully blend the soup until smooth and creamy-- if the soup is really really hot, then it might be a good idea to let it cool for a few minutes... otherwise it CAN blow the lid off your blender, and, well, that's not safe.  The coconut milk and the parsley will help to cool it down some.  Err on the side of caution.
  5. Add Salt, according to taste.  Blend slowly just to mix in the salt.
  6. Pour into bowls and garnish.  Eat directly! Lovely as a winter first course, or as a meal in itself.
  7. Makes 4-6 servings, depending on the appetites.

Celery is a pretty healthy vegetable.  The Medical Medium believes that a glass of celery juice at the beginning of each day is how to detox and maintain a healthy liver.  Read more about that HERE.

Vegan Mexican Meatball Soup

I'm posting this fabulous spicy and delicious soup as a Wellness Wednesday item on our Facebook Vegan Recipes Group <-- Please Join.  This soup is a just what you need during a time when people all around you are dropping from the flu-- OR-- when you are recovering, yourself, from some nasty seasonal bug.  It is a WELLNESS SOUP.

First of all, for the soup base, you do not need a lot of impossible-to-find ingredients-- or ingredients that you rearely have in the fridge.  As you can see from the picture above, I have used some pretty basic veggies: onions, carrots, potatoes, red pepper (okay, that is a luxery item), and canned tomatoes.  I have also integrated the celery fibre left over from our morning Celery Juice (made with a blender-- no juicer needed-- the big rage among those following the Medical Medium).  So, apart from the onions and canned tomatoes, you can pretty much use any left-over veggies from your fridge or pantry.  I have made the soup WITHOUT any added oils, but you can decide whether or not that suits you-- oil is included in the recipe instructions (I just add water).

The really really tasty vegan "meatballs" are a combination of walnuts, black beans, ground flax and some spices.  They are dense and soft and so tasty-- two per dish is satisfactory, but really, I could fill my whole dish up with them, they are that good!  (I double up the recipe).  If you have another favourite vegan meatball recipe, go with it!  But the black beans really "make" this a Mexican meatball-- and the walnuts are not just pretty little nuts (haha)-- they are packed with Omega 3 Essential Fatty Acids, great for the brain and wellbeing in general.

I live in the wonderful Comox Valley on Vancouver Island where there are more vegans and shops selling organic and vegan food than you can shake a stick at-- we also have businesses that stock the shops with formulations of wonderful herbs and spices made right here in the Valley!  One such lovely little family business is called CLEVER CROW.  I use their TACO SEASONING to cover all the spices called for in the Mexican Soup recipe, and then some:

  • Paprika
  • Cumin
  • Coriander
  • Sea Salt
  • Black Pepper
  • Oregano
  • Onions
  • Garlic
  • Red Pepper and
  • Ancho Peppers.
I get enough spices in this package to make about 5 or 6 big soups, each making about 6 generous adult servings.  Because the Seasoning is so nicely combined to taste exactly the way you imagine Mexican Meatball Soup should taste-- spicy and zesty, but not so as to take away from the other flavours in the soup-- it's a win-win proposition to use this packaged spice.  The company specializes in all kinds of sea salts (appropriate since we are a sea-side community on Vancouver Island) and has a number of other spice mixes.  Of course this Taco Spice can be used to flavour tacos and burritos too!  Click above or here to see more about their company and/or to order the spices.

I generally make this recipe in my Instant Pot, but it is highly adaptable to your regular soup making methods.  The recipe is another one of the wonderful recipes developed by my Facebook friend, Michelle Blackwood at her Healthier Steps website.  She has developed her recipes with a lot of testing and understanding of what is healthy and what is healthy&delicious.  Click here to go to the recipe for this fabulous VEGAN MEXICAN MEATBALL SOUP.  Enjoy and Be Well!
